When someone with celiac eats foods containing gluten, their body triggers an inflammatory immune response that attacks and damages the small intestine over time. This damage
prevents proper digestion of food as well as absorption of essential nutrients needed for good health resulting in malabsorption and malnutrition issues such as vitamin deficiencies or even
osteoporosis due to calcium deficiency caused by poor nutrient absorption from food intake.
Additionally, mental health issues like anxiety or depression may arise due to
malnourishment because our brain needs certain vitamins too.

What types of food are allowed on a gluten-free and what are not?

Allowed fresh foods include fruits and vegetables such as beans, seeds legumes, and nuts. Also, eggs & lean non-processed meats, fish, or poultry.
And most low-fat dairy products as well as certain grains such as buckwheat & grits.
Carb sources from quinoa, rice, and oats are manufactured in a gluten-free environment.

Not allowing anything that comes from wheat, barley such as bread, toast, cakes, flour, candies, cereals, pasta, sauces, salad dressings, or bouillons.
